I’m too embarrassed to show you my spattered cookbook page, but you can find this reliable recipe on page 52 in the 1975 edition of Better Homes and Gardens Home-Style Cooking, under “Homespun Baked Goods”.
Since then I’ve cut the granulated sugar in half (to the 1/4 cup shown here). I always add a few more blueberries, often mixing in some cherries, blackberries, peaches or strawberries. Or you can just use any one of these fruits by itself.
I’ve designed a recipe card to make it fun to share. Here it is. If you’d like a 4” by 6” printed card of this, please email me with your address and I’ll be happy to send you one in the mail.
The authors of Home-Style Cooking assure us that this is a home-baked specialty “similar to those every homemaker prepared as a part of her daily routine in pioneer days.”
I would like to think that such a woman had the leisure to sit for awhile with a piece of her blueberry cake, hot coffee and a wonderful book, before tackling the day’s chores.
Enjoy it while it’s warm!
Trying to cut my carb intake but in this case I will make an exception. Thanks for sharing!
